Whenever I tell my kids that Fajitas are on the menu they get so excited! I always find this recipe a great way to squeeze in their 5 a day, without it feeling like a battle. Its great to watch their little preferences come out as we build our own fajitas as a family!
* = Mandatory
- Chicken Breast*
- Olive Oil*
- Salsa (Homemade or shop bought)
- Sour Cream (Homemade or shop bought)
- Guacamole (Homemade or shop bought)
Step 1 – Create the marination by adding 1tbsp of Parpika, Garlic, Cajun, Cumin and a pinch of salt and pepper to a large bowl. Add 5tbsp of olive oil and the juice of half a squeezed lime and lemon. Stir thoroughly.
Step 2 – Prepare the onions, pepper, tomato and chicken by slicing them to your preference and coating/marinating them for however long you desire – this can be done as early as the day before.
Step 3 – Place all the ingredients onto a pre-heated griddle.
Step 4 – Keep the heat high, turning the ingredients until a charred effect has been accomplished. The vegetables should now be soft and chicken cooked through.
Step 5 – Prepare the remaining vegetables such as your lettuce and cucumber that will remain raw, and grate the cheese.
Step 6 – Finalise by heating the wraps in the microwave and filling them to your liking – I personally love to stuff them with salsa, sour cream and guacamole!
- Tinned chopped tomatoes
- Lime juice
Step 1 – Combine all the ingredients together and stir. Serve chilled with a garnish of coriander.
